Jenn Selke's Chocolate Chip Cookies

Here's the recipe for the cookies I ate on the air.

Preheat Oven to 350 degrees

DOUBLE BATCH
CREAM TOGETHER
1 lb softened butter
2 cups dark brown sugar
1 1/2 white sugar

BEAT IN AND STIR 3-4 MINUTES
5 tsp vanilla (I use spice Islands) get good vanilla!
3 jumbo eggs

ADD
5 cups flour
1 cup oatmeal
1 1/2 tsp salt
1 1/2 tsp baking soda

STIR IN
4 cups chips
4 cups chopped pecans (not really optional)
When I have tried to make these without nuts they flatten and lose their thickness. You can try but don't say I didn't warn you. Check warehouse clubs for bulk chips and nuts. They usually have best prices.

PUT ON COOKIE SHEETS

I use very inexpensive, non-fancy cookie sheets. I roll the cookies like meatballs in about golf ball size balls. You can make them as big or small as you want.


COOK IN OVEN - this is the hard part

Cook on an un-greased cookie sheet at 350° for 8-10 minutes or as long as 15+ minutes for the bigger cookie. Depending on the oven and the size of the cookie, the baking time really varies. The top racks can cook faster than the bottom so you may need to rotate your trays. You have to watch these cookies.

Take out cookies when they a just about cooked and let sit on cookie sheet for about 5 minutes.

When the cookies start to brown on the edges and the tops start to look like they are browning but you still think they are not done they probably are. They continue to cook once out of the oven. If you take them out of the oven when you think they are done and they keep cooking you will have cookies that are a bit crispy and crunchy. No burnt just crisp.
